Those little bits of fried cheese that fall off are so good, it only made sense to coat the whole sandwich in it.
Fun fact: you can put cheese inside *and* outside your sandwich. A crispy cheesy grilled crust is so good. A little shredded cheese once it's golden to melt, then flip and let it fry a bit.

I had a friend who's mother made a dessert concoction with orange jello and vanilla ice cream, kept it in a cheese whiz jar. The first time I saw her eat some, a bug spoonful straight out of the jar, I almost ralfed. I thought she was eating straight up cheese whiz 🤢
When I picture cheese in my head, it's always cheddar first.

That's a good cheese fried up. A chef friend back in the day made it for me a lot. So good.
Interesting. I like them with two layers of old Cheddar and a layer of pickled peppers in between sometimes. A good spicy sandwich.
