I’ve played with a handful of breakfast burrito recipes and this is my favorite.

The technique is important and saves time.

1 dozen eggs

1/2 bag of frozen hash browns (diced potatoes)

1 lb bacon

2 cans diced green chilis (4-6 oz per can)

8 oz Monterrey cheese

16 large tortillas

3 tbs sour cream

A large handful of micro greens such as leeks,

Arugula or cilantro

Chop the bacon into bite sized pieces and cook in a large deep pan - with a lid if possible. At the same time, I brown the potatoes (hash browns).

Save 3-4 tablespoons of bacon grease for the eggs.

Put the bacon in a bowl with paper towels to absorb the grease.

Using the same deep pan the bacon was in cooked the eggs. Do not wash. Scramble the eggs in a bowl and pour into the hot and greasy bacon pan. Add some bacon grease if needed.

When the eggs are almost cooked, stir in the sour cream and chilies. Shred the cheese and add to the eggs. Add the browned hash browns.

Scoop into tortillas and add your preferred micro greens.

When I make a large batch, I wrap them in tin foil and put them in the fridge. Everyone has an easy breakfast before school!

I also make this with breakfast sausage. When I do, I use a pound of mild and a pound of hot sausage.
