I need someone to make scenarios and diagrams, cut epics down into stories, etc. and do acceptance tests. And give the devs quick feedback, that's priority.

Yes, but the trick is in finding the ones who can deal with road maps and PRs and acceptance testing, planning builds, organizing beta testing phases, etc. It's a whole talent stack.

I could probably help w some of that. But you know what would be cool? Something like a directory of #nostriches by profession. 1) Easily find help in the area one is looking for, 2) support other nostriches 3) pay and get paid sats (or fiat, if that's the preference)(or not, if you are donating your time) 4) a good way to find gigs and make extra sats.
