I like them, but they can’t beat my sourdough pancakes with either:

- blueberries, served with sorghum syrup, or

- white cheddar cheese, cooked in bacon fat

Savory pancakes rock! You can have savory crepes too, y’know

Ive had savory crepes (ham and cheese) but never brought that over to other pancakes.

Also, sourdough pancakes, why are they better?

For me: flavor (!!!) and a sense of accomplishment and independence.

For some people: easier to digest than non-fermented flour

Sourdough bread rules our house for these reasons but haven't done pancakes

I do things a little differently than most: I never discard. Sacrilege I know but my bread still rises and makes people go β€œyummm” πŸ˜‚

So whenever I know I’ll be using my starter I do try to feed it about 8-12 hours beforehand so it’ll be all happy bubbly. I also try to make sure it has been β€œawake” out of the fridge and fed for at least one day before this β€œpriming” feeding.

My pancake recipe also uses some baking soda. I add that RIGHT before cooking because otherwise the floofness will subside.

I gotta say, I love that you were at the hospital for pre induction and are now on #nostr schooling everyone on pancakes 🀣

I absolutely love Nostr.cooking! The hardest part is figuring out the extension process so you don’t have to share your nsec. The formatting and recipe composition is beautiful and easy. It also has notes for tips etc. Its awesome!

Can you get me up to speed on NOSTR.cooking that seems awesome...?

It’s basically allrecipes but on Nostr so you can zap and receive zaps for recipes you make. I love it because people can post the region that the dish is typically popular in and it’s not as rigid or messy as some other cooking platforms can be (Pinterest). It’s a great way to gain dinner & meal prep ideas too.

As a home cook led by the ancestors πŸ˜‚ I tweak recipes to my liking and don’t take exact notes. Nostr.cooking provides space to describe my cooking process in away that’s not as intimidating as building actual recipes. I don’t feel the need to be precise because I can label it in a way that allows other home cooks to tweak things to their liking. I also love it because it helps me sharpen my skills. If/when I post I try and post aesthetically appealing pics… I’m not where I wanna be yet but I can see the growth and that’s exciting to me as well.

Why almond flour vs sourdough vs crepes?

Well crepes can be made with anything, cos basically just super duper thin pancakes (a Frenchman may argue me on this πŸ˜‚)

I just love the Simple Mills Original Almond Flour pancake mix.. frikkin expensive so def not a daily thing tho!

Never had Ethiopian food?

If you like Indian food you will probably like it. Similar but different.

The pancake you see all the stews on is injera. It’s a stretchy spongy tangy pancake that is sourdough made from teff flour, not wheat. It sounds weird but is really good.

lots of stews and ferments. lots of natural processes, and clay ovens. and ethiopia is known for its spices, going back thousands of years.

all served on top of a natural rise sourdough pancake. it’s dreamy stuff.

The best coffees I have ever had are also at Ethiopian restaurants. The only coffees I have ever enjoyed black.
