Are crepes the best pancake?
Discussion
I like them, but they canβt beat my sourdough pancakes with either:
- blueberries, served with sorghum syrup, or
- white cheddar cheese, cooked in bacon fat
Holup, send pics cause I've never heard of this savory pancake business
Ooh I should but itβs been so long since I made some I donβt have pics at the ready
Iβll send you some next time I make them
Savory pancakes rock! You can have savory crepes too, yβknow
But just try it. Trust me itβs good
Ive had savory crepes (ham and cheese) but never brought that over to other pancakes.
Also, sourdough pancakes, why are they better?
For me: flavor (!!!) and a sense of accomplishment and independence.
For some people: easier to digest than non-fermented flour
Sourdough bread rules our house for these reasons but haven't done pancakes
Are you using fresh or old starter?
#InquiringMinds
I do things a little differently than most: I never discard. Sacrilege I know but my bread still rises and makes people go βyummmβ π
So whenever I know Iβll be using my starter I do try to feed it about 8-12 hours beforehand so itβll be all happy bubbly. I also try to make sure it has been βawakeβ out of the fridge and fed for at least one day before this βprimingβ feeding.
My pancake recipe also uses some baking soda. I add that RIGHT before cooking because otherwise the floofness will subside.
I gotta say, I love that you were at the hospital for pre induction and are now on #nostr schooling everyone on pancakes π€£
It's a rather productive use of time
π oh yeah I gotta distract myself from the muffled howling sounds around me somehow
Plus Iβll be here overnight, lots of time on my handsβ¦
nostr:npub1jrx2fk666k5nt8vgak9xwyxlgcwh8fl9rvpwvvcpdthuqkcnptrqdfhtaq is also picking me up some things we left at home, including l an Analog magazine I forgot to bring
Is there anyway youβd be able to add your recipe to Nostr.cooking?? Iβve only ever made pancakes with buttermilk.
I actually have buttermilk in my recipe too π all the fermented stuff!
The recipe I adapted mine from said βwaterβ and I said βnoβ π
I am intrigued by Nostr.cooking and do aim to put some of my recipes on. That can be a goal soon!
ππ youβre the sculptor, recipes fold to your bending!!
I absolutely love Nostr.cooking! The hardest part is figuring out the extension process so you donβt have to share your nsec. The formatting and recipe composition is beautiful and easy. It also has notes for tips etc. Its awesome!
Btw β Congratulations to you and your family!! I wanted to be sure to tell you how resilient and strong you are!! π»π«
Can you get me up to speed on NOSTR.cooking that seems awesome...?
Itβs basically allrecipes but on Nostr so you can zap and receive zaps for recipes you make. I love it because people can post the region that the dish is typically popular in and itβs not as rigid or messy as some other cooking platforms can be (Pinterest). Itβs a great way to gain dinner & meal prep ideas too.
As a home cook led by the ancestors π I tweak recipes to my liking and donβt take exact notes. Nostr.cooking provides space to describe my cooking process in away thatβs not as intimidating as building actual recipes. I donβt feel the need to be precise because I can label it in a way that allows other home cooks to tweak things to their liking. I also love it because it helps me sharpen my skills. If/when I post I try and post aesthetically appealing picsβ¦ Iβm not where I wanna be yet but I can see the growth and thatβs exciting to me as well.
Itβs kitchen #proofofwork ππ§‘You get the recipe, try it out, then make it yours.
Love this, will share with family that has a cooking blog!
Oh yes! Butter and raw goat cheese shredded on almond flour pancakes π
Why almond flour vs sourdough vs crepes?

Well crepes can be made with anything, cos basically just super duper thin pancakes (a Frenchman may argue me on this π)
Never tried sourdough pancakes, sounds next level!
I just love the Simple Mills Original Almond Flour pancake mix.. frikkin expensive so def not a daily thing tho!

You're winning, for now but don't get comfortable

buckwheat crepes with farm raised ham and Swiss Gruyère with thin sliced green apples on the side
β€οΈ
Ooh Iβd try that
Canβt beat ham and apples
Buckwheat always tasted kinda fruity to me so thatβs actually an intriguing pairing
the gruyere draws out the strange combo of sweet and savory as well. itβs so simple and so right π€€
I've never had either of these. Tell me more
Never had Ethiopian food?
If you like Indian food you will probably like it. Similar but different.
The pancake you see all the stews on is injera. Itβs a stretchy spongy tangy pancake that is sourdough made from teff flour, not wheat. It sounds weird but is really good.
lots of stews and ferments. lots of natural processes, and clay ovens. and ethiopia is known for its spices, going back thousands of years.
all served on top of a natural rise sourdough pancake. itβs dreamy stuff.
The best coffees I have ever had are also at Ethiopian restaurants. The only coffees I have ever enjoyed black.
Roti Canai is the best pancake

I do love me some roti
That looks very delicious, but have you tried lachha paratha?
Flaky π€€
Usually I can go yup that's a good list I agree. I feel great lost that I have barely tried any on this list. I mean I looove ciabatta, like its barley on the list
Finally looked closer at the list than at the picture
Scallion pancakes are delicious but the Chinese pancake Iβve been missing, even craving, is jiang laobing ι ±ηι₯Ό
Usually theyβre sold in sections but I would buy a whole one to bring home and cut up myself.
Iβd put a fried egg in it or cut a slice to roll up and dip in salted plain yogurt
That second option is very very not traditional but very very good π

crepes are a lie
Rolled pancakes with dulce de leche filling are the best
