I'm not convinced someone couldn't just backdoor the head to record its acceleration.

First, the table claims thay hashed keys are not vulnerable to QC, which is incorrect. Whether they are is purely depend on whether the QC in question can crack keys faster than the worst case block time.

Nah, the quantum scare is vastly overblown and the proposal has several serious deficiencies.

The amputation is because of T2, not 1, isn't it? At least I don't remember hearing about it in relation to T1, just T2.

For T2 there already is a quite reliable solution: high-fat animal-based ketogenic diet. Though I don't think it can prevent amputation if it's too late. Frankly, I don't remember seeing anyone fail to reverse their T2 on a great diet. Some might need to go all the way to carnivore though.

Not 100% 100% of all time, but 100% 99% of the time and 99% the remaining 1% of the time. I do eat spices when I have to and then voluntarily a tiny amount of plants on occasions. Also some people consider dairy non-strict, I do not but aside from butter I don't overdo dairy.
