Butter vinegar jelly.

Does not split.

recipe:

300g vinegar any flavour

150g butter

2g Agar

2 leaves (4g) gelatine

salt

Cook vinegar, butter, agar, salt to a sirup consistency add the water soaked gelatine,

pour on a tray, chill, cut, reheat.

Very delicious with pasta or risotto!!!

Best basic prep „a la creme“

Chop charlottes, clarify butter, clean the cauliflower mushroom, roast the mushrooms gently in clarified butter with some colour, remove, braise charlottes soft in more butter, add some cream, add the mushrooms and reduce till it’s creamy, season it with salt and fresh chopped parsley 👨🏽‍🍳👌🏻

For professionals: turn off the heat after reducing, add a fresh egg yolk and a zip of sherry

Yes definitely… in fine dining most chefs are not brave enough with seasoning… and it’s difficult cause the edge of elegance and underseasoned are really close.

It’s the wild variety of oregano… in German we call it „Dost“ … looks, tastes, smells the same … just growing higher.

“Celeriac ripe and young”

.

It came into my life during a time of culinary disorientation and completely turned my idea and perception of “value” upside down.

It took three attempts and three and a half years to develop this dish.

2011: Due to a moment of inattention during a stressful time, I baked a celeriac in a salt crust and then forgot it in the oven, though I had turned the oven off.

The result became the starting point for what is now my signature dish: a celeriac dried in a salt crust for one year without ever opening the crust.
