These are lacto fermented Hungarian hot wax peppers with garlic and oregano. All that's needed is the ingredients and a salt water bribe. You can do small batches in quart jars on the counter. Probiotics galore.
We made several gallons last year and these are from the last jar. Going to run out before the peppers are ready to harvest again but got pretty close to closing the loop.

Much better results dehydrating strawberries by cutting them in half.

One pint jar jam packed with dehydrated strawberries. It's amazing how much space dehydrated food saves on shelf not to mention the freezer. This batch finished in 1/3rd the time and didn't take that much longer to process by cutting in half. I wasn't able to prep them in one continuous session so I'm not exactly how much longer it takes.

Strawberries keep coming, trying a different way to dehydrate (sold some for sats at the local Bitcoin meetup too!)

I used whole strawberries for the last batch in the Bitcoin mining dehydrator which took 3 days to complete. Now, I'm trying a batch with them cut in half. There is definitely a trade off between time spent prepping and processing to decrease dehydration time and just shoving stuff in the box and letting it run. Because I'm also mining Bitcoin I'm hyper aware of the energy cost to run the dehydrator.

We have been eating strawberries with everything! Strawberry yogurt, strawberry banana bread, fresh strawberries, strawberry ice cream. Pretty soon we are going to be tired of strawberries and start focusing on preservation instead of gobbling them up. Ended up selling some at the local Bitcoin meetup for sats too! Strawberries are my favorite.

I've been wanting to make a skid for the sheep water trough so I can move everything at once when switching paddocks and also avoid having to empty/refill the trough with each move.

I finally had a good reason to figure out a solution when we decided we wanted to have a mobile milking stanchion as well.

I was able use the sled I built for collecting maple sap over the winter as the skid for the water trough.

Then I mounted the milk stanchion (built with leftover materials from other projects) in the suscovich style chicken tractor I built back in 2018 that wasn't really being used much.
Everything can can now be pulled together as one train from paddock to paddock saving me tons of time. The same is true for being able to milk the dairy sheep out in the field each day rather than walk them all the way to wherever the stanchion was.
Produce no waste, a big permaculture principle being implemented here. First of all the shade shelter is built from a repurposed tarp shelter after it was destroyed in a wind storm. The sap collection sled now has a purpose outside of winter and was built with what was laying around as was the milking stanchion. The chicken tractor wasn't being utilized either. Now we are taking full advantage of the stuff we built (and much of it with trash).

I don't know anything about goats. We sold lamb for $13/lb last season and breeding stock for $350 per ewe. $500 for bred ewes late winter.

I have some losses from time to time but the permaculture principle integrate rather than segregate is very powerful. Using the same space to obtain multiple yields while each use symbiotic increases the efficiency of production of the other is a powerful force. Very rarely is one area of our homestead used exclusively for one purpose at any given time.
How do you make these? I've been trying to edit my avatar to match this style and haven't been able to get good results.
Katahdin hair sheep grazing sparse pasture

On the first grazing loop this year I decided to skip these next couple paddocks because the grass wasn't growing well. These paddocks are the most sparse on the homestead. I will lightly graze them for a day with the sheep to provide some nutrients and impact but not put too much stress on the grass. I need to borrow a manure spreader and put a couple loads of composted horse manure down to kick start some better growth.

Milking East Friesian Dairy Sheep

Getting things in order at our milking stanchion. The sheep are still uncomfortable with it so we brought the lamb over to help calm the sheep down.

Took the time to trim the hooves too. They were in a pretty wet paddock over the winter so the hooves needed some attention.

Getting the hang of milking. There is definitely a learning curve and I'm sure things would move much more quickly if we had a mentor near by to show us thier technique.
All in all, another step forward in our sovereign dairy production.

Eating the first batch of sheep milk yogurt!


Featuring fresh picked strawberries and maple syrup from the homestead, this is our first batch of sheep milk yogurt. We used the crock pot to make it with starter culture from some yogurt we had frozen (purchased from the local Bitcoin meetup with sats). Such a good feeling to know that everything in the bowl was grown and produced right here on the homestead.

Food Forest Harvest: Strawberries
Found 15 minutes to pick some strawberries before lunch. It's hard to keep up with them with a short window of good ripeness. I hate to not pick every single good strawberry but I simply can't get pick them all in time. I'll do my best to pick for 15 minutes here and there for the next couple weeks and see how many we can get!

Italian seasoning slow cooker venison neck and shanks

Venison neck and shanks (hunted on the homestead) cooked in Italian seasoning with chicken stock. Roasted carrots and onions with garlic bread featuring garlic powder from the homestead along with pickled peppers from last year's garden and henbit sprinkled on top from the Bitcoin mining dehydrator.


Scraping the bottom of the freezer for some venison but the slow cooker magically makes the tough cuts delicious.

If anything calls for sugar we use maple syrup. Mostly because that's the sugar we make so that's what we have. I wonder if honey would work too albeit a lot brighter of a flavor usually.
We eat homemade pizza weekly

This week is bacon with peppers and mushrooms. Bacon is grown by a local Bitcoiner and paid for with Bitcoin of course.

This pizza features ingredients from the homestead including sheep milk and maple syrup in the crust, and garlic powder in the sauce. Doing our best to eat where we live.
