I’m not accusing anyone of anything, but trying to flex how many sats you giveaway just by itself as one number is weak. If you give away a bunch of sats just to a close group of 10 friends, is that different than the same amount of sats to 100s of people you don’t know? Thats what I’m getting at

Yep! So my regular pasture-raised ghee comes from cows that are grass fed and pasture-raised only but some of their diet is supplemented with grains grown on the farm they are on.

I have recently added to farms in my area that I am getting cream/butter from and am able to now get a more yellow ghee from my non-100% grass fed cream and butter!

Just restocked a couple of the popular 32 oz options of the regular pasture-raised ghee! Tweaked the formulation a bit to result in a slightly better yellow color in the ghee.

And this ghee comes from a mix of raw and low vat pasteurized non homogenized milk/butter. Because of the clarification process, it actually makes it somewhat irrelevant if it comes from raw or not!

Usually my ghee turns out fine, this time its weird, so i need your advice please!

The left charge is dark, did i burn it? Did something caramelize?

The right charge seemed to be transparent/golden when i cooked it, now after some time i see that there is still a lot of protein in the ghee? Will it turn bad soon?

But the right doesn’t seem to have any milk fat in it. If you leave it out to cool down it will solidify and crystallize, that’s totally fine. If you put it in the fridge it will have a smoother split texture

So the left one would just be considered ‘brown butter ghee’ which is what happens when the milk solids burn a lot and stay in the ghee for a while during the clarifying process. Just will have a different taste and smell that makes it more suited for desserts, pancakes, and things of that nature, but still perfectly good to eat.

Not really sure what is going on with the right. I would say any time you are making ghee, make sure you are filtering it through a cheesecloth to make sure none of the separate milk fat is getting in with the ghee.
