Day 3 of OMAD, simply because my meals have been so satiating and it’s taking about 24 hrs or more to get hungry again. Works for me…I feel amazing!

I had eggs multiple days in a row, so needed a break today.


Yes organs if you want. All ruminant animals for the “beef” part. I’ll be eating lamb chops as well. Can’t wait for those!
I’m back to BBBE (beef, butter, bacon, eggs) this week and feeling fabulous already!

After 3 years carnivore (today!), I’m looking back at some pics from along the way. These are from last Fall, when I felt I was at my IDEAL health, weight and body composition @ 45 yrs old. I was between 130-132 lbs. Months before that, I enjoyed seeing the scale go under 130 but didn’t feel quite as good that low.
I have experimented many times and kept proving to myself this fact: For me to maintain my personal ideal health, I need to eat mostly BBBE (beef, butter, bacon, eggs), occasional dairy, keep my stress level as low as possible, get good quality sleep, strength train 2 days/wk, intermittent fasting (1-2 meals/day with some 48 hr fasts in the mix)
Blessed and thankful for this journey the last 3 years!! 🙏🏼🙏🏼💕

1st meal after my road trip was a fatty steak! Just what I needed to get back to the grind this week.
It was cooked ahead and reheated. Busy summer!

Reverse searing these steaks in the oven to take on my girl’s trip!
I’ll slice them and add to the cooler to make some easy meals while on the road. 💪

Brought some bacon to have along with coffee on the ride to the cabin. I love cold bacon that was cooked in the oven. The best texture!

My 8 yr old likes softer bacon, so I make a combo of textures 😃 Crispy is my personal favorite.

Poached Eggs Recipe
1. Add 1/2 cup water to a small bowl. Crack 3-4 eggs into the water in bowl (no vinegar needed)
2. Bring 4 cups water to boil in a pot
3. Once water is boiling, gently pour eggs and all water from bowl into the pot with boiling water. It will look like a mess of egg drop soup at 1st. Turn heat down a little and keep simmering.
4. Use slotted spoon to check eggs at about 3 minutes. Takes about 4-5 minutes for whites to be cooked, while keeping yolks runny.
5. Remove eggs with slotted spoon. I like to add butter mayo on top.

Not sure on the weight, but I usually roast 4-5. Use a little if I’m making the butter and eat the rest with salt
If you’re feeling fancy, you can’t go wrong with this idea:
Whipped Bone Marrow Butter
Roast marrow bones (I roast from frozen, 450°F for 30 minutes)
Mix liquid bone marrow with a little steak juice to equal 4 ounces.
Mix in 2 ounces of melted salted butter.
Let chill enough to whip.


Is there such a thing as too much butter?! The answer is no 🤣

Chuck Roast Instant Pot method:
1. Dry brine with salt for 24-72 hrs (optional)
2. Add 1 stick of butter (1/2 cup or 113 g) to Instant Pot, turn on sauté setting
3. Cut roast into approx 4-5 pieces
4. Sear all sides in butter on sauté setting (Add spices, if desired)
5. Add 1-2 cups beef bone broth
6. Cook on manual, high pressure setting for 1.5 hrs for 3 lb roast (time will vary based on roast weight) add more time if it’s not falling apart.
PS I use the drippings to make a gravy by turning sauté setting on (after taking the roast out) and whisking in some gelatin, letting the liquid reduce some.
