Do you really like them all? A few years ago, my friends had a grilled cheese party where we made them with all 3 and all different cheeses. The consensus was that butter was superior, olive oil was an easy second, and mayo was inferior to the other two.
Different cheeses can absolutely ruin it. I am not a fan of the really strong cheeses. But as far as mayonnaise or butter or olive oil go, Ill take them all together or individually.

No I add plenty of those. The mayonnaise is an emulsifier. Just use a spoonful to make it nice and creamy. Not enough to even taste.

Some people use butter on the bread, some people use olive oil on the bread, and some people use mayonnaise on the bread. They're using all three as an oil or fat to brown the bread and stop the bread from burning.

Melts and liquefies
Going off the theme here, *but* slather some mayo on chicken and toss it in some seasoned panko or regular breadcrumbs and bake it for super moist "fried" chicken without the mess.
This actually sounds interesting ๐ค using mayo instead of egg. May have to give it a go sometime.
My kid loves it. I've started just doing the top so I don't have to fight with a wire rack to keep the bottom from being soggy. The idea came from Pinterest waaayyyyy back in the day and they used crushed potato chips.
Not just heated; itโs being used as a medium for frying which is conveniently spreadable on the bread.

Correct. It is a thin swipe that gets absorbed into the bread.
Youโre essentially frying in a mix of oil and egg yolk fats with a little extra flavoring, and it doesnโt run on the rest of the pan to burn there wasted.
Butter now, but at least a bit of butter for better browning with EVOO is acceptable.

Hamburger buns work so much better than regular bread. If you are feeling adventurous add pickles. The tart breaks up the grease

Kimchi grilled cheese is amazing! My favorite BBQ restaurant actually sells them. You can get them with chopped bbq pork in them, too. A full meal ๐ช

-lightly toast the slices of bread;
-add thick slices of cheese;
-spread butter on both sides of sandwich;
-sprinkle sea salt on both sides;
-heat cast iron skillet;
-grill both sides until golden brown;
-slice sandwich diagonally;
-serve with cold glass whole milk.
